THAI CHICKEN SALAD - featuring Wow Chilli Lime Ginger Dipping Sauce

  • 1 small red onion, finely sliced
  • 400g chicken mince
  • 1 tabs. oil
  • small bunch mint
  • small bunch coriander
  • 100g roasted, chopped peanuts
  • 50 ml Wow Chilli/Lime/Ginger/Dipping Sauce
  • 125g rice vermicelli (or other rice noodles)
  • 1 cos lettuce


  1. Prepare the rice vermicelli to the directions on the pack and set aside.

  2. Heat the oil in a pan and cook the chicken till cooked through and lightly browned.

  3. Set aside a few of the mint and coriander leaves; finely chop the remainder.

  4. Rinse and drain the cos lettuce leaves.

  5. Mix the cooked chicken, Wow Chilli Lime Ginger Dipping Sauce, chopped mint and coriander and sliced onion together.

  6. To serve – lay 2 or 3 of the cos lettuce leaves on each plate. Divide the rice vermicelli between the plates, then add the chicken mix over the top of the vermicelli and garnish each with the chopped peanuts and remaining mint and coriander leaves.

    Alternative Version – use finely sliced, cooked beef in place of the chicken.
