SPICED CHICKEN WITH APRICOTS featuring Hells Breath Moroccan Marinade

Ingredients

  • 1 chicken
  • 2-3 teaspoons of Hells Breath Moroccan Marinade
  • 1-2 tabs oil
  • 50g fresh ginger, finely sliced
  • 1 onion chopped
  • 2 tabs tomato paste
  • 1 tabs honey
  • 1 lemon jiuce and zest
  • 50g dried apricots cut into quarters

Directions

  1. Add Moroccan Marinade to the oil in a saucepan just big enough to fit the whole chicken into. Heat, add the chicken and brown on all sides. Remove 

  2. Remove the chook to a plate and add the onions and ginger to the saucepan and cook for a few minutes. 

  3. Put the chook back in on top of the onions. Add the tomato paste, honey, lemon juice and zest, apricots mixed into a cup of water

  4. Cook for 30-40 mins over a low boil, turning a couple of times. Add a little more water if required - you will need enough to serve as a sauce to the final dish

  5. Serve with cous cous and perhaps a garnish of chopped pistachio nuts or fresh coriander.
