Blend the Chilli Lime Cordial with the water and put into a shallow tray and put into the freezer for approx. 2 - 3 hours. This mix needs to become a slushy, icy mix but not solid. This is best achieved by regularly stirring the mix over the 2-3 hours. (The time will depend on your freezer). Finish off with a brief 'pulse' in a food processor.
Beat the egg whites till stiff, and gently mix through the slushy Cordial mix and return to the freezer in a shallow tray.
Looks fantastic served in a martini glass with a small chilli or slice of lime for garnish.
Serve in chilled glasses with a garnish of thinly sliced limes.
