CHILLI LIME ICE-CREAM featuring Hells Breath Chilli Lime Cordial

  • 2 egg whites
  • 2 egg yolks
  • 300 mls whipping cream
  • 150 mls Hells Breath Chilli Lime Cordial
  • 200 mls coconut milk


  1. Beat the egg whites till thick and stand in peaks. Set aside. Beat teh egg yolks till creamy. While still beating add the whipping cream and continue whipping till thick. Gently stir the Cordial and coconut milk through the mixture. Then very gently fold through the beaten egg whites. It is the air that you have beaten into the mixture which helps make a lovely ice-cream texture rather than an ice-block! If you have an ice-cream machine follow it's instructions. If not, put the mix into a couple of shallow trays and put them in the freezer for a couple of hours. Take out and gently stir through the mixture spreading the frozen outside and the softer middle. return to the freezer. Repeat this after another couple of hours. It will take about 5-6 hrs of freezing to be ready to serve.
